For the Blackened Salmon:

4 salmon fillets (6 oz each)

2 tablespoons paprika

1 tablespoon garlic powder

1 tablespoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and black pepper, to taste

2 tablespoons olive oil or melted butter

For the Creamy Dijon Sauce:

½ cup sour cream

2 tablespoons Dijon mustard

1 teaspoon lemon juice

1 tablespoon honey (optional for sweetness)

Salt and pepper, to taste

Fresh chives or parsley, chopped (for garnish)

Instructions
 

Prepare the Salmon:

    In a small bowl, mix paprika, garlic powder, onion powder, cayenne pepper, thyme, oregano, salt, and pepper to create the blackening spice blend. Pat the salmon fillets dry with paper towels and rub them generously with olive oil or melted butter. Sprinkle the spice mixture evenly over both sides of the salmon fillets.

      Make the Creamy Dijon Sauce:

        In another bowl, combine the sour cream, Dijon mustard, lemon juice, and honey (if using). Mix until smooth and well blended. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.

          Sear the Salmon:

            Heat a cast-iron skillet over medium-high heat until hot. Add a little more olive oil or butter if necessary. Place the salmon fillets in the skillet, skin-side down (if applicable). Cook for about 4-5 minutes without moving them, allowing the spices to create a blackened crust. Carefully flip the fillets and cook for an additional 3-4 minutes until the salmon is cooked through and flakes easily with a fork.

              Serve:

                Remove the blackened salmon from the skillet and let it rest for a few minutes. Plate the salmon and drizzle the creamy Dijon sauce over the top. Garnish with chopped chives or parsley for a fresh touch.
