500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

1 onion, thinly sliced

4 cloves garlic, minced

1-inch piece of ginger, minced

1 bell pepper (red or green), sliced

2 tablespoons freshly ground black pepper

1 tablespoon soy sauce

2 teaspoons oyster sauce

1 tablespoon rice vinegar

1 teaspoon sugar

Salt to taste

2 green onions, chopped for garnish

Cooked rice or noodles (for serving)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce, oyster sauce, rice vinegar, sugar, and a pinch of salt. Let it marinate for at least 30 minutes to absorb the flavors.

    Prep the Stir-Fry Base: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion, minced garlic, and ginger, sautéing until they become aromatic and the onion is translucent.
