1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons dark soy sauce

1 tablespoon light soy sauce

1 tablespoon oyster sauce

1 tablespoon cornflour (cornstarch)

2 tablespoons vegetable oil

4 cloves garlic, minced

1 inch ginger, finely chopped

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced

2 tablespoons freshly cracked black pepper

1 tablespoon honey

2 spring onions (scallions), chopped (for garnish)

Salt to taste

Optional: Cooked rice or noodles for serving

Marinate the Chicken: In a bowl, combine the chicken, dark soy sauce, light soy sauce, oyster sauce, cornflour, and a pinch of salt. Mix well and let it marinate for at least 30 minutes.

    Prepare the Stir-Fry: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and chopped ginger, stirring for about 30 seconds until fragrant.

      Cook the Chicken: Add the marinated chicken to the skillet, cooking until it is browned and cooked through, about 5-7 minutes. Stir occasionally to ensure even cooking.

        Add Vegetables: Toss in the sliced onion, red, and green bell peppers. Stir-fry for an additional 3-4 minutes until the vegetables are tender but still crisp.

          Season the Dish: Sprinkle the freshly cracked black pepper over the chicken and vegetables, and drizzle the honey for a touch of sweetness. Stir well to combine everything thoroughly and adjust salt if necessary.
