Ingredients

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk

1 tablespoon honey (optional)

For the Chorizo Gravy:

1 tablespoon olive oil

1/2 pound chorizo sausage (mild or spicy, according to preference)

3 tablespoons all-purpose flour

2 cups milk (whole or 2%)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Biscuits:

    - Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

      - In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

        - Incorporate the cubed butter into the flour mixture using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

          - Create a well in the center and pour in the buttermilk and honey (if using). Mix until just combined; do not overwork the dough.

            - Turn the dough out onto a floured surface and gently pat it to about 1-inch thickness. Cut out biscuits using a biscuit cutter or glass.

              - Place the biscuits on the prepared baking sheet and bake for 12-15 minutes, or until golden brown.

                Make the Chorizo Gravy:

                  - In a large skillet, heat the olive oil over medium heat. Add the chorizo sausage, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

                    - Sprinkle the flour over the cooked chorizo and stir well to combine. Cook for about 1-2 minutes to remove the raw flour taste.

                      - Gradually pour in the milk while continually stirring to avoid lumps. Bring the mixture to a simmer and cook until thickened, about 5-10 minutes.

                        - Stir in garlic powder, onion powder, and season with salt and pepper to taste. Adjust the seasoning as necessary.

                          Serve:

                            - Split the warm biscuits in half and ladle generous amounts of chorizo gravy over each half.

                              - Garnish with chopped fresh parsley before serving.
