For Dumplings:

1 cup all-purpose flour

2 tablespoons cornstarch

1/2 teaspoon salt

1/2 cup hot water

1 tablespoon sesame oil

For Filling:

1 cup ground chicken or tofu

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1 tablespoon curry powder

1 teaspoon soy sauce

Salt and pepper to taste

2 tablespoons chopped cilantro

For Soup Base:

4 cups chicken or vegetable broth

1 can (400 ml) coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce (optional)

1 tablespoon lime juice

1 bell pepper, sliced

1 cup snap peas

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Dumpling Dough:

    - In a mixing bowl, combine the flour, cornstarch, and salt.

      - Gradually add hot water while stirring until a dough forms.

        - Knead the dough on a lightly floured surface for about 10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

          Make the Dumpling Filling:

            - In a skillet over medium heat, add sesame oil and sauté the onion, garlic, and ginger until fragrant.

              - Gently add ground chicken or tofu, curry powder, soy sauce, salt, and pepper. Cook until the meat is fully cooked or tofu is heated through.

                - Remove from heat and mix in chopped cilantro. Let it cool.

                  Assemble the Dumplings:

                    - Divide the rested dough into small pieces (about 1-inch balls). Roll each piece into a thin circle.

                      - Place a teaspoon of filling in the center of each dough circle. Fold the dough over to form a half-moon shape and pinch to seal the edges well.

                        Prepare the Soup Base:

                          - In a large pot, add the chicken or vegetable broth, coconut milk, red curry paste, and fish sauce. Stir to combine over medium heat.

                            - Add sliced bell pepper and snap peas. Simmer for 10 minutes, allowing the flavors to meld.

                              Cook the Dumplings:

                                - Gently drop the dumplings into the simmering soup. Cook for about 8-10 minutes, until the dumplings are floating and cooked through.

                                  Finish the Soup:

                                    - Stir in lime juice and adjust flavors with additional salt or curry paste as needed.

                                      Serve:

                                        - Ladle the hot soup into bowls, garnish with fresh cilantro and lime wedges. Enjoy the warmth and spice of this delightful curry dumpling soup!
