Ingredients

2 cups fresh strawberries, hulled and sliced

1/2 cup granulated sugar (adjust based on sweetness of berries)

1 teaspoon vanilla extract

2 cups plain Greek yogurt (full-fat for creaminess)

1 tablespoon lemon juice

Pinch of salt

Fresh mint leaves for garnish (optional)

Instructions

In a medium mixing bowl, combine the sliced strawberries and 1/4 cup of sugar. Toss well and let rest for 15-20 minutes until the strawberries release their juices.

Once the strawberries are juicy, transfer them to a blender or food processor. Add the vanilla extract, lemon juice, and salt. Blend until smooth but still slightly chunky for texture.

In another bowl, combine the Greek yogurt with the remaining 1/4 cup of sugar. Mix well until the sugar dissolves and the yogurt is creamy.

Gently fold the strawberry mixture into the yogurt until well incorporated. Taste and adjust sweetness if needed, adding more sugar if desired.

Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency, usually about 20-25 minutes.

If you don’t have an ice cream maker, you can pour the mixture into a shallow container and freeze it. Every 30 minutes, stir the mixture with a fork to break up ice crystals until fully frozen, about 3-4 hours.

Once frozen, scoop the berry bliss strawberry frozen yogurt into bowls or cones. Garnish with fresh mint leaves if desired.

Enjoy immediately or store in an airtight container in the freezer for up to two weeks. Let it sit at room temperature for a few minutes to soften before serving.
