Ingredients

1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

1/4 cup BBQ sauce (your choice, store-bought or homemade)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 red onion, cut into wedges

6 wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes)

4 cups mixed salad greens (such as arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 avocado, diced

1/4 cup feta cheese, crumbled (optional)

Additional BBQ sauce for drizzling

Instructions

Marinate the Chicken: In a large bowl, combine the cubed chicken, BBQ sauce, smoked paprika, garlic powder, salt, and pepper. Mix until the chicken is well coated. Cover and marinate in the refrigerator for at least 30 minutes or up to 4 hours for more flavor.

Prepare the Vegetables: While the chicken is marinating, cut the bell peppers and red onion into skewering pieces. You can also prepare the salad greens, cherry tomatoes, and avocado for assembly later.

Assemble the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken, bell peppers, and onion onto skewers, alternating between chicken and vegetables. Leave a bit of space between each piece for even cooking.

Grill the Skewers: Place the skewers on the grill and cook for 10-12 minutes, turning every few minutes, until the chicken is cooked through and has nice grill marks. Ensure internal chicken temperature reaches 165°F (75°C).

Prepare the Salad: While the skewers are grilling, toss the mixed greens, cherry tomatoes, and avocado in a large bowl. Drizzle with a bit of olive oil, salt, and pepper to taste.

Serve: Once the skewers are done, remove them from the grill and let them cool for a couple of minutes. Serve the salad on a platter, top with the grilled skewers, and sprinkle with feta cheese if desired. Drizzle additional BBQ sauce over the top for added flavor.
