BBQ Chicken Quesadilla

Ingredients
  

2 cups cooked chicken, shredded (preferably grilled or rotisserie)

1 cup BBQ sauce (your favorite brand)

4 large flour tortillas

2 cups shredded cheese (a mix of Monterey Jack and Cheddar)

1 cup red onion, thinly sliced

1/2 cup fresh cilantro, chopped

1/2 cup corn (canned or frozen, drained)

1 tablespoon olive oil

Sour cream and avocado slices (for serving)

Instructions
 

In a mixing bowl, combine the shredded chicken with BBQ sauce until well coated. Set aside.

    Heat a large skillet over medium heat and add olive oil.

      Once the skillet is hot, place one tortilla in the skillet.

        Spread a quarter of the BBQ chicken mixture over the tortilla.

          Sprinkle a handful of shredded cheese on top, followed by some sliced red onion and corn.

            Top with a little more cheese for good measure and cover with another tortilla.

              Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese is starting to melt.

                Carefully flip the quesadilla using a large spatula and cook for another 3-4 minutes on the other side until golden brown and crispy.

                  Remove from the skillet and let it cool for a minute, then slice into wedges.

                    Repeat the process for the remaining tortillas and fillings.

                      Serve warm with chopped cilantro, sour cream, and avocado slices for garnish.
