BBQ Chicken Grilled Cheese

Ingredients
  

2 slices of sourdough bread

1 cup cooked chicken, shredded (ideally BBQ-flavored)

1/2 cup BBQ sauce

1 cup shredded mozzarella cheese

1/2 cup shredded sharp cheddar cheese

2 tablespoons unsalted butter

1/4 cup red onion, thinly sliced (optional)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

In a medium bowl, combine the shredded chicken with the BBQ sauce. Mix until the chicken is well coated.

    Heat a skillet over medium heat. While the skillet is heating, spread 1 tablespoon of butter on one side of each slice of sourdough bread.

      Place one slice of bread, butter-side down, in the skillet. Layer half of the mozzarella and cheddar cheese on the bread.

        Spoon the BBQ chicken mixture evenly over the cheese layer.

          Add the remaining cheese on top of the chicken for an extra cheesy bite.

            Top with the second slice of bread, butter-side up.

              Cook for about 3-4 minutes, until the bottom slice is golden brown. Carefully flip the sandwich and cook for an additional 3-4 minutes, until the other side is also golden and the cheese is melted.

                Remove the sandwich from the skillet and let it rest for a minute. If desired, add thinly sliced red onion and garnish with fresh cilantro or parsley.

                  Cut the sandwich in half and serve warm with extra BBQ sauce for dipping.
