Ingredients

1 cup pearl barley

4 cups water or vegetable broth

1 cup almond milk (or any milk of choice)

1 tablespoon maple syrup (or honey)

1 teaspoon vanilla extract

½ teaspoon cinnamon

¼ teaspoon salt

Fresh fruit for topping (e.g., bananas, berries, or apples)

Nuts or seeds for added crunch (e.g., almonds, walnuts, or chia seeds)

Optional: 2 tablespoons raisins or dried cranberries

Instructions

Rinse the Barley: Begin by rinsing the pearl barley under cold running water to remove any debris. Drain well.

Cook the Barley: In a medium-sized pot, combine the rinsed barley and 4 cups of water or vegetable broth. Bring to a boil over medium-high heat.

Simmer: Once boiling, reduce the heat to low, cover, and let it simmer for about 30-40 minutes, or until the barley is tender but still chewy. Stir occasionally and add more water if necessary to prevent sticking.

Add Flavor: Once cooked, stir in the almond milk, maple syrup, vanilla extract, cinnamon, and salt. Mix well and let it simmer for an additional 5-10 minutes until the mixture thickens to your desired consistency.

Prepare Toppings: While the porridge is simmering, prepare your fruit and nuts for topping.

Serve: Spoon the warm barley porridge into bowls, and sprinkle your choice of fresh fruit, nuts, and optional dried fruits on top. Drizzle a little more almond milk if desired.

Enjoy: Serve warm and enjoy your creamy and nutritious barley porridge!
