Bang Bang Chicken Skewers

1 lb (450g) boneless, skinless chicken breast, cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust for spice level)

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon honey

1 teaspoon sriracha (optional for extra heat)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Skewers (if using wooden skewers, soak in water for 30 minutes)

Marinate the Chicken: In a large bowl, combine the cubed chicken, olive oil, garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne pepper. Mix well to coat the chicken evenly and let it marinate in the refrigerator for at least 30 minutes.

    Prepare the Sauce: In a separate bowl, mix the mayonnaise, sweet chili sauce, honey, and sriracha (if using) until smooth. Adjust the sweetness and spiciness to your taste. Set aside.

      Assemble the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated chicken pieces onto skewers, leaving a small space between each piece for even cooking.

        Cook the Chicken: Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).
