Ingredients

1 lb boneless, skinless chicken thighs

1 cup cornstarch

1 tsp garlic powder

1 tsp onion powder

½ tsp salt

½ tsp black pepper

1 cup panko breadcrumbs

2 large eggs, beaten

1 cup vegetable oil, for frying

4 cups cooked rice (white or brown)

2 cups broccoli florets, steamed

1 cup shredded carrots

½ cup sliced green onions, for garnish

Sesame seeds, for garnish

Bang Bang Sauce:

½ cup mayonnaise

¼ cup sweet chili sauce

1 tbsp Sriracha (adjust to taste)

1 tbsp lime juice

Instructions

Prepare the Chicken:

    - In a bowl, mix the cornstarch, garlic powder, onion powder, salt, and black pepper. Set aside.

      - Pat the chicken thighs dry and cut them into bite-sized pieces.

        Coat the Chicken:

          - Dredge each piece of chicken in the cornstarch mixture, shaking off excess.

            - Dip the coated chicken pieces into the beaten eggs and then roll them in the panko breadcrumbs to coat evenly.

              Fry the Chicken:

                - In a large skillet, heat the vegetable oil over medium-high heat.

                  - Once hot, add the breaded chicken pieces in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes per side. Remove and place on a paper towel-lined plate to drain excess oil.

                    Make the Bang Bang Sauce:

                      - In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth. Adjust the spice level by adding more Sriracha if desired.

                        Assemble the Bowls:

                          - In each bowl, start with a base of cooked rice.

                            - Top with fried chicken, steamed broccoli, shredded carrots, and a generous drizzle of the Bang Bang sauce.

                              - Garnish with sliced green onions and a sprinkle of sesame seeds.

                                Serve and Enjoy:

                                  - Serve the bowls warm, allowing everyone to mix their ingredients and enjoy the explosion of flavors!
