Bang Bang Chicken Bowls

Ingredients
  

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup cornstarch

2 large eggs, beaten

1 cup panko breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

Oil, for frying

2 cups cooked jasmine rice

1 ½ cups shredded lettuce (green leaf or romaine)

1 cup carrots, shredded

½ cup red cabbage, thinly sliced

½ cup edamame, shelled and steamed

2 green onions, chopped

½ cup fresh cilantro, chopped

Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

1 teaspoon lime juice

Instructions
 

Prepare the Chicken:

    - In a bowl, mix together cornstarch, garlic powder, onion powder, salt, and pepper. Set aside.

      - In another bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

        - Dip each piece of chicken in the cornstarch mixture, then in the egg, and finally coat with panko breadcrumbs.

          Fry the Chicken:

            - Heat oil in a deep skillet or frying pan over medium-high heat (about 350°F or 175°C).

              - Carefully add the breaded chicken pieces in batches, frying until golden brown and cooked through (about 3-5 minutes). Remove and place on paper towels to drain excess oil.

                Make the Bang Bang Sauce:

                  - In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and lime juice until smooth. Adjust seasoning to taste.

                    Assemble the Bowls:
