1 lb boneless, skinless chicken thighs

2 cups cooked jasmine rice

1 cup broccoli florets

1 cup shredded carrots

1 red bell pepper, sliced

3 green onions, chopped

1 tablespoon sesame oil

1 tablespoon soy sauce

2 tablespoons cornstarch

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper to taste

½ cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon rice vinegar

1 tablespoon sriracha (optional, for extra heat)

Sesame seeds and cilantro for garnish

Prepare the Chicken: In a large mixing bowl, combine the chicken thighs with cornstarch, garlic powder, ginger powder, salt, and pepper. Make sure the chicken is evenly coated.

    Cook the Chicken: Heat sesame oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and fully cooked through, about 6-7 minutes on each side. Remove from heat and let it rest before slicing into bite-sized pieces.
