1 lb boneless, skinless chicken thighs

1 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

Vegetable oil (for frying)

2 cups cooked Jasmine rice

1 cup shredded carrots

1 cup edamame (shelled)

1 cucumber, thinly sliced

½ cup green onions, chopped

¼ cup fresh cilantro, chopped

For the Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 tablespoon lime juice

Prepare the Chicken: In a bowl, combine cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Pat the chicken thighs dry and coat each piece thoroughly in the cornstarch mixture.

    Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once hot, add the coated chicken thighs and fry for about 5-7 minutes per side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.
