1 lb boneless, skinless chicken thighs

1/2 cup cornstarch

1/2 cup buttermilk

1 cup panko breadcrumbs

1/2 cup mayonnaise

1/4 cup sweet chili sauce

2 tablespoons sriracha (adjust for spice level)

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

4 cups cooked jasmine rice

1 cup shredded lettuce

1 cup diced cucumbers

1/2 cup shredded carrots

2 green onions, sliced

Marinate the Chicken: In a bowl, combine buttermilk, salt, and pepper. Add the chicken thighs, ensuring they are fully coated. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).
