Ingredients

1 pound boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

Vegetable oil for frying

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (or more for extra heat)

2 green onions, thinly sliced (for garnish)

Sesame seeds (for garnish)

Instructions

Marinate the Chicken: In a bowl, cover the chicken thighs with buttermilk, making sure they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Prepare the Coating: In a separate bowl, mix together the flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

Coat the Chicken: Remove the chicken from the buttermilk and let the excess drip off. Dredge each piece in the seasoned flour mixture until fully coated. Press down lightly to ensure an even coating. Set aside on a plate.

Heat the Oil: In a large skillet or deep fryer, heat vegetable oil to 350°F (175°C). Ensure there is enough oil to submerge the chicken pieces.

Fry the Chicken: Carefully place the coated chicken thighs into the hot oil, cooking in batches if necessary. Fry for about 6-8 minutes on each side or until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.

Make the Bang Bang Sauce: In a medium mixing bowl, combine the mayonnaise, sweet chili sauce, and sriracha. Adjust the sriracha amount according to your spice preference. Mix well until smooth.

Serve: Slice the fried chicken into strips and generously drizzle or dip in the Bang Bang sauce. Garnish with sliced green onions and sesame seeds.

Enjoy: Serve the Bang Bang Chicken with steamed rice or your favorite side dish for a delightful meal!
