Bananas Foster French Toast with Homemade Banana Bread

3 ripe bananas, mashed

1/3 cup melted butter

1 teaspoon baking soda

Pinch of salt

3/4 cup brown sugar

1 large egg, beaten

1 teaspoon vanilla extract

1 cup all-purpose flour

For the Bananas Foster Topping:

2 tablespoons unsalted butter

1/2 cup brown sugar

1/4 cup dark rum (optional)

2 bananas, sliced

1 teaspoon vanilla extract

1/4 teaspoon ground cinnamon

For French Toast:

4 thick slices of the homemade banana bread

2 large eggs

1/2 cup milk

1 teaspoon vanilla extract

Pinch of salt

Butter, for frying

Instructions
 

Make the Banana Bread:

    - Preheat your oven to 350°F (175°C) and grease a loaf pan.

      - In a mixing bowl, combine the mashed bananas with the melted butter. Stir until well blended.

        - Mix in the baking soda and salt. Then, add the brown sugar, egg, and vanilla extract, mixing until combined.

          - Finally, fold in the flour until just incorporated. Pour the batter into the prepared loaf pan.

            - Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before slicing.

              Prepare the Bananas Foster Topping:

                - In a skillet over medium heat, melt the butter. Add brown sugar and stir until melted and bubbly.

                  - If using, carefully add the dark rum (be cautious as it may flame) and continue to stir.

                    - Add the sliced bananas, vanilla extract, and ground cinnamon. Cook for about 2-3 minutes until the bananas are well coated and slightly softened. Remove from heat.

                      Make the French Toast:

                        - In a shallow bowl, whisk together the eggs, milk, vanilla extract, and a pinch of salt.

                          - Heat butter in a skillet over medium heat. Dip each slice of banana bread into the egg mixture, allowing it to soak for a few seconds on each side.

                            - Fry the soaked bread slices in the skillet until golden brown, about 2-3 minutes per side.

                              Assemble:
