2 ripe bananas, mashed

1 cup rolled oats

1/2 cup almond flour (or regular flour)

1/2 cup fresh blueberries (you can use frozen if necessary)

1/4 cup honey or maple syrup

1 tsp vanilla extract

1/2 tsp baking powder

1/2 tsp cinnamon

1/4 tsp salt

1/4 cup chopped nuts (e.g., walnuts or pecans) - optional

1/4 cup dark chocolate chips - optional

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Prepare the Banana Mixture: In a large bowl, mash the ripe bananas until smooth. Add the honey (or maple syrup) and vanilla extract, mixing well until combined.

      Combine Dry Ingredients: In another bowl, whisk together the rolled oats, almond flour, baking powder, cinnamon, and salt.

        Mix It Together: Gradually add the dry ingredients to the banana mixture, stirring until just combined. Gently fold in the blueberries, nuts, and chocolate chips if using.

          Scoop the Cookies: Using a tablespoon or cookie scoop, drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of the spoon.
