Baked Salmon Sushi

Ingredients
  

1 cup sushi rice

1 ¼ cups water

2 tablespoons rice vinegar

1 tablespoon sugar

1 teaspoon salt

4 sheets nori (seaweed)

8 oz salmon fillet, skinless, diced

1 avocado, sliced

1 small cucumber, julienned

1 tablespoon sesame oil

1 teaspoon soy sauce (for salmon marinade)

Wasabi and pickled ginger (for serving)

Instructions
 

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a saucepan, combine rinsed rice and 1 ¼ cups of water and bring to a boil. Once boiling, reduce the heat to low, cover, and let simmer for 20 minutes or until water is absorbed. Remove from heat and let it sit for an additional 10 minutes, covered.

    Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt until dissolved. When the rice is ready, transfer it to a large bowl and gently fold in the vinegar mixture using a wooden spoon or rice paddle. Let the rice cool to room temperature.

      Marinate the Salmon: In a bowl, combine the diced salmon with soy sauce and sesame oil. Let it marinate for about 10 minutes.

        Preheat the Oven: Preheat the oven to 375°F (190°C).

          Assemble the Rolls: Place a sheet of nori on a bamboo sushi mat, shiny side down. Wet your hands to prevent sticking and take a handful of sushi rice (about ¾ cup) and evenly spread it over the nori, leaving a 1-inch border at the top.

            Layer the Fillings: On the lower third of the rice-covered nori, layer some marinated salmon, slices of avocado, and julienned cucumber.

              Roll the Sushi: Carefully lift the bamboo mat from the bottom and start to roll the sushi away from you, pressing gently but firmly to keep everything tucked inside. Roll until the edge of the nori is reached. Use a little water to seal the edge.

                Bake the Sushi: Transfer the roll to a baking sheet lined with parchment paper, seam side down. Repeat with the remaining ingredients. Bake the rolls in the preheated oven for about 10-12 minutes or until the salmon is fully cooked.

                  Slice and Serve: Remove from the oven and let the rolls cool for a couple of minutes. With a sharp knife, slice the rolls into 1-inch pieces. Serve with wasabi and pickled ginger on the side.
