8 oz (225 g) of pasta (penne or fusilli work great)

8 oz (225 g) feta cheese block

2 cups cherry tomatoes, halved

4 cloves garlic, minced

¼ cup extra virgin olive oil

1 tsp red pepper flakes (adjust to taste)

Salt and pepper, to taste

Fresh basil leaves, for garnish

½ cup grated Parmesan cheese (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large baking dish, combine the halved cherry tomatoes, minced garlic, red pepper flakes, salt, and pepper. Pour the olive oil over the mixture and toss to coat evenly.

      Add Feta: Make a space in the center of the tomatoes and place the feta cheese block. Drizzle a little more olive oil on top of the feta, and sprinkle with a pinch of salt and pepper.

        Bake It: Place the baking dish in the oven and bake for about 25-30 minutes, or until the tomatoes are blistered and the feta is melted and golden on top.

          Cook the Pasta: While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Drain, reserving a little pasta water.

            Combine: Remove the baking dish from the oven. Using a fork, mix the baked feta and tomatoes to create a creamy sauce. Add the drained pasta to the baking dish; mix well to combine. If the sauce is too thick, add a splash of reserved pasta water to reach desired consistency.

              Garnish and Serve: Serve hot, garnished with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired. Enjoy your delicious Baked Feta Pasta!
