8 oz elbow macaroni

4 slices of thick-cut bacon, chopped

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon Dijon mustard

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon smoked paprika

Salt and black pepper to taste

2 cups sharp cheddar cheese, grated

1/2 cup mozzarella cheese, grated

1/4 cup grated Parmesan cheese

1/4 cup panko bread crumbs

Fresh parsley for garnish (optional)

Instructions
 

Cook the macaroni: In a large pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon with a slotted spoon and drain on paper towels, leaving the bacon fat in the skillet.

      Make the sauce: In the skillet with the bacon fat, add the butter and melt it over medium heat. Stir in the flour and cook for about 1 minute, whisking constantly, to make a roux.

        Add the milk: Gradually whisk in the milk, ensuring there are no lumps. Continue whisking until the mixture thickens and comes to a simmer, about 3-5 minutes.

          Flavor the sauce: Stir in the Dijon mustard, garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for an additional 2 minutes.

            Cheese it up: Remove the skillet from the heat and gradually add the cheddar cheese and mozzarella, stirring until melted and smooth.

              Combine: Add the cooked macaroni and crispy bacon to the cheese sauce, stirring well to combine all ingredients.
