1 cup all-purpose flour

1/4 teaspoon salt

1/3 cup hot water

1/2 pound ground pork

1 tablespoon soy sauce

1 tablespoon ginger, minced

2 cloves garlic, minced

1 green onion, finely chopped

1 teaspoon sesame oil

1 tablespoon fresh cilantro, chopped

Black pepper to taste

For the Soup:

6 cups chicken or vegetable broth

2 tablespoons soy sauce

1 tablespoon chili paste or sauce (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon fresh ginger, sliced

2 cloves garlic, smashed

1-2 green onions, sliced (for garnish)

Fresh cilantro (for garnish)

Chili flakes (for garnish, optional)

Instructions
 

Make the Dumpling Dough:

    - In a medium bowl, mix the flour and salt. Gradually add hot water and stir until combined. Knead until a smooth dough forms. Cover with a damp cloth and let it rest for 30 minutes.

      Prepare the Filling:

        - In a separate bowl, combine ground pork, soy sauce, minced ginger, minced garlic, chopped green onion, sesame oil, cilantro, and black pepper. Mix until well blended.

            - Divide the dough into small pieces (about 16). Roll each piece into a thin circle on a floured surface. Place a spoonful of filling in the center, then fold the dough over to create a half-moon shape. Pinch the edges to seal tightly, making pleats if desired.
