2 lbs chicken (cut into pieces, bone-in preferred)

2 tablespoons Jamaican curry powder

1 teaspoon allspice (pimento)

1 teaspoon salt (or to taste)

½ teaspoon black pepper

3 tablespoons vegetable oil (or coconut oil)

1 large onion (sliced)

2 cloves garlic (minced)

1-inch piece of fresh ginger (grated)

2-3 stalks green onions (chopped)

1-2 Scotch bonnet peppers (whole, adjust for heat preference)

2 medium carrots (sliced)

1 bell pepper (sliced)

1 can (14 oz) coconut milk

1 cup chicken broth or water

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

Juice of 1 lime

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine the curry powder, allspice, salt, and black pepper. Add chicken pieces and massage the spice mixture into the chicken, ensuring all pieces are well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for enhanced flavor.

    Sauté Aromatics: In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the sliced onion and cook until they are translucent (about 3-4 minutes). Stir in minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Brown the Chicken: Add the marinated chicken pieces to the pot, including the remaining marinade. Sear the chicken on all sides until golden brown (about 8-10 minutes).

        Add Vegetables: Stir in the chopped green onions, whole Scotch bonnet peppers, sliced carrots, and bell pepper. Mix everything well to combine.

          Combine Liquids: Pour in the coconut milk and chicken broth (or water) to the pot. Add the thyme and the juice of the lime. Stir to combine all ingredients.
