For the Chicken Marinade:

500g boneless chicken thighs, cut into bite-sized pieces

1 cup plain yogurt

2 tablespoons lemon juice

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon garam masala

1 teaspoon paprika

1 teaspoon turmeric powder

1 teaspoon salt

2 cloves garlic, minced

1 inch piece of ginger, grated

1-2 green chilies, finely chopped (adjust to taste)

For the Masala Sauce:

2 tablespoons vegetable oil

1 large onion, finely chopped

2 cloves garlic, minced

1 inch piece of ginger, grated

1-2 green chilies, finely chopped (optional)

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon garam masala

1 teaspoon turmeric powder

1 teaspoon smoked paprika

1 can (400g) crushed tomatoes

1 cup heavy cream

Salt to taste

Fresh cilantro, chopped for garnish

Instructions
 

Marinate the Chicken: In a large bowl, combine yogurt, lemon juice, cumin, coriander, garam masala, paprika, turmeric, salt, garlic, ginger, and green chilies. Add the chicken pieces, ensuring they are well coated. Cover and refrigerate for at least 1 hour (preferably overnight).

    Cook the Chicken: Preheat your grill or oven to a high setting. Skewer the marinated chicken pieces or spread them on a baking tray. Cook for about 15-20 minutes, turning halfway, until the chicken is cooked through and slightly charred. You can also broil them in your oven for similar results.

      Prepare the Masala Sauce: In a large pan, heat vegetable oil over medium heat. Add the chopped onion and cook until soft and golden, about 8-10 minutes. Add minced garlic, ginger, and green chilies, cooking for another 2-3 minutes until fragrant.

        Add Spices: Stir in the cumin, coriander, garam masala, turmeric, and paprika; cook for 1-2 minutes, allowing the spices to bloom.

          Tomatoes and Cream: Pour in the crushed tomatoes, bring to a simmer, and cook for 10-15 minutes until thickened. Lower the heat and gradually stir in the heavy cream until fully incorporated. Season with salt.

            Combine Chicken and Sauce: Add the grilled chicken pieces to the masala sauce, ensuring they are well coated. Simmer for another 5-10 minutes to let the flavors meld.

              Serve: Garnish with chopped cilantro and serve hot with basmati rice or naan for a delightful meal.
