Asparagus Quiche with Feta

1 pre-made pie crust (9-inch)

1 cup fresh asparagus, trimmed and cut into 1-inch pieces

1 cup feta cheese, crumbled

4 large eggs

1 cup heavy cream

1/2 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1 tablespoon fresh dill, chopped (or 1 teaspoon dried)

1 tablespoon olive oil

1/4 cup grated Parmesan cheese (optional for topping)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Asparagus: In a skillet, heat the olive oil over medium heat. Add the asparagus pieces and sauté for about 3-4 minutes until they are tender but still crisp. Remove from heat and set aside.

      Blind Bake the Crust: Place the pre-made pie crust into a 9-inch pie dish. Prick the bottom with a fork to prevent bubbling. Blind bake the crust by placing parchment paper over the crust and filling it with pie weights or beans. Bake for 10-12 minutes. Remove the weights and parchment paper and bake for an additional 5 minutes until lightly golden. Set aside to cool slightly.

        Make the Custard Filling: In a large mixing bowl, whisk together the eggs, heavy cream, milk, salt, pepper, garlic powder, onion powder, and dill until well combined.

          Assemble the Quiche: Evenly distribute the sautéed asparagus and crumbled feta cheese over the bottom of the pre-baked pie crust. Pour the egg mixture over the asparagus and feta, ensuring they are well covered. If using, sprinkle the grated Parmesan cheese on top for added flavor and a crispy topping.
