Ingredients

1 lb ground beef (preferably lean)

1 tablespoon vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1/2 cup bell pepper, finely diced (red or yellow)

1/2 cup water chestnuts, chopped

1/4 cup green onions, sliced (plus more for garnish)

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons hoisin sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 teaspoon sriracha (optional, for a spicy kick)

1 head of iceberg or butter lettuce, leaves separated

Sesame seeds for garnish

Instructions

Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat.

Cook the Beef: Add the ground beef, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

Add Aromatics: Stir in the minced garlic and grated ginger. Cook for an additional 1-2 minutes until fragrant.

Incorporate Veggies: Add the diced bell pepper, chopped water chestnuts, and sliced green onions. Sauté for another 3-4 minutes until the vegetables are tender.

Make the Sauce: In a small bowl, mix together the soy sauce, hoisin sauce, sesame oil, rice vinegar, and sriracha (if using). Pour this sauce over the beef mixture and stir well to combine. Cook for another 2-3 minutes until everything is heated through.

Prepare the Lettuce Wraps: Carefully wash and dry the lettuce leaves. Spoon a generous amount of the beef mixture into each leaf.

Garnish and Serve: Sprinkle with additional green onions and sesame seeds. Serve immediately while the filling is warm.
