4 cups all-purpose flour

1 teaspoon salt

1 teaspoon sugar

1 cup warm water

1 teaspoon active dry yeast

1/4 cup olive oil (plus extra for brushing)

1 teaspoon ground cardamom (optional for flavor)

1 tablespoon yogurt (optional for richness)

Instructions
 

Activate Yeast: In a small bowl, combine warm water (not too hot), sugar, and yeast. Let it sit for about 10 minutes until frothy.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, salt, and cardamom.

      Combine: Create a well in the center of the flour mixture. Pour in the activated yeast mixture, olive oil, and yogurt. Mix until a rough dough forms.

        Knead the Dough: Transfer the dough to a floured surface and knead for about 10 minutes until the dough is smooth and elastic.

          First Rise: Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

            Shape the Dough: Once risen, punch down the dough and turn it out onto a floured surface. Divide into equal portions (about 8-10 for medium-sized flatbreads).

              Roll Out: Take each portion and roll it out into thin circles (about 1/8 inch thick) using a rolling pin.

                Second Rise: Place rolled dough on parchment paper or a floured surface and cover with a cloth. Let them rest for 30 minutes.

                  Cook the Dough: Preheat a skillet or griddle over medium-high heat. Cook each rolled dough for about 2 minutes per side, or until puffy and golden brown. Brush with a little olive oil if desired.

                    Serve: Enjoy them warm as a base for wraps, a side for stews, or with dips such as hummus or baba ganoush.
