Ingredients
  

2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup milk

1 large egg

1 teaspoon vanilla extract

Oil for frying (vegetable or canola)

For the glaze:

1 cup powdered sugar

2 tablespoons milk

1/4 teaspoon vanilla extract

Instructions
 

In a medium bowl, combine the diced apples with 1 tablespoon of sugar and set aside for about 10 minutes to allow the juices to release.

    In a separate large bowl, whisk together the flour, remaining sugar, baking powder, cinnamon, and salt.

      In another bowl, mix the milk, egg, and vanilla extract until well blended.

        Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the diced apples gently.

          In a deep skillet or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).

            Use a small cookie scoop or tablespoon to carefully drop spoonfuls of the batter into the hot oil, frying 3-4 bites at a time. Fry until golden brown, about 2-3 minutes per side.

              Remove the fritter bites and place them on a paper towel-lined plate to drain excess oil.

                For the glaze, combine the powdered sugar, milk, and vanilla extract in a bowl until smooth.

                  Drizzle or dip each apple fritter bite in the glaze while they’re still warm.
