Ingredients

4 large croissants (preferably day-old for optimal texture)

1 cup almond paste (store-bought or homemade)

½ cup powdered sugar

1 large egg

2 tablespoons almond extract

½ cup sliced almonds (for topping)

2 tablespoons unsalted butter, melted (for brushing)

1 tablespoon all-purpose flour (for dusting)

Pinch of salt

Optional: powdered sugar for dusting

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Prepare the Almond Filling: In a medium bowl, combine the almond paste, powdered sugar, egg, almond extract, and a pinch of salt. Mix until smooth and creamy, ensuring there are no lumps.

Split the Croissants: Gently slice each croissant in half lengthwise, being careful not to cut all the way through, so that they remain hinged.

Fill the Croissants: Spread a generous amount of the almond filling inside each croissant. Make sure to coat both the bottom and the top halves evenly.

Close and Brush: Carefully press the croissants back together and place them on the prepared baking sheet. Brush the tops with melted butter and sprinkle with sliced almonds for added crunch and elegance.

Bake: Bake the filled croissants in the preheated oven for about 15-20 minutes, or until they are golden brown and the filling is warm and slightly oozy.

Serve: Once baked, remove from the oven and let them cool for a few minutes. For an extra touch, dust lightly with powdered sugar before serving. Enjoy your homemade almond croissants warm!
