Alfredo Pasta with Chicken and Shrimp

12 oz fettuccine pasta

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 pound chicken breast, diced

1 pound large shrimp, peeled and deveined

4 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Reserve about 1 cup of pasta water, then drain the pasta and set aside.

    Sauté Chicken: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breast, season with salt, pepper, and Italian seasoning. Cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.

      Cook Shrimp: In the same skillet, add the remaining tablespoon of olive oil. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink and opaque. Remove from the skillet and set aside with the chicken.

        Make the Alfredo Sauce: In the same skillet, lower the heat and add the minced garlic. Sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring to combine. Allow it to simmer gently for about 5 minutes, then gradually add the grated Parmesan cheese, whisking continuously until smooth and creamy. If the sauce is too thick, use the reserved pasta water to reach your desired consistency.

          Combine: Add the cooked fettuccine, chicken, and shrimp to the sauce. Toss everything together gently until well coated. Check for seasoning and adjust if needed.

            Serve: Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
