Ingredients

1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup orange marmalade

1/4 cup soy sauce

1 tablespoon rice vinegar

Instructions

Prepare the Chicken: In a medium bowl, toss the cut chicken pieces with a pinch of salt and pepper to season them lightly.

Make the Sauce: In a separate bowl, combine the orange marmalade, soy sauce, and rice vinegar. Mix well until the marmalade is fully dissolved into the other ingredients.

Cook the Chicken: In a large skillet, heat a tablespoon of oil over medium-high heat. Add the chicken pieces to the skillet and cook for about 5-7 minutes, or until the chicken is browned and cooked through.

Add the Sauce: Once the chicken is cooked, pour the orange sauce over the chicken in the skillet. Stir well to coat all the pieces, cooking for an additional 3-5 minutes until the sauce thickens slightly and caramelizes a bit on the chicken.

Serve: Remove from heat and serve immediately. This orange chicken pairs beautifully with steamed rice or sautéed vegetables for a complete meal.
