Ingredients

4 large bell peppers (any color)

1 cup pizza sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup pepperoni slices, quartered (or your choice of toppings like mushrooms, olives, etc.)

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Olive oil spray or a drizzle of olive oil

Fresh basil leaves for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare the Peppers: Cut the tops off the bell peppers and remove the seeds and membranes, creating small cups for your filling. If needed, slice a thin layer off the bottom of the peppers to help them stand upright, but be careful not to cut a hole through.

Mix the Filling: In a bowl, combine the pizza sauce, mozzarella cheese, quartered pepperoni, Parmesan cheese, Italian seasoning, and garlic powder. Mix until well combined.

Fill the Peppers: Spoon the filling mixture into each bell pepper, packing it down slightly to ensure they are full and the topping won't fall out during baking.

Bake the Peppers: Place the filled peppers upright in a baking dish. Spray or drizzle the tops lightly with olive oil to help them cook evenly. Bake in the preheated oven for 20-25 minutes, or until the peppers are tender and the cheese is bubbly and golden.

Serve: Remove the poppers from the oven and let them cool slightly. Garnish with fresh basil leaves if desired. Serve warm as a fun appetizer or snack!
