Ingredients

400g fresh udon noodles

3 tablespoons chili oil (adjust to taste)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon ginger, grated

1 spring onion, finely sliced

1 tablespoon toasted sesame seeds

Fresh cilantro or parsley for garnish (optional)

Salt to taste

Instructions

Cook the Udon Noodles: In a large pot of boiling water, add the udon noodles. Cook according to package instructions (usually about 2-3 minutes for fresh noodles) until they are tender but still chewy. Drain and set aside.

Prepare the Sauce: In a large bowl, mix together the chili oil, soy sauce, rice vinegar, sesame oil, minced garlic, and grated ginger. Stir well to combine all the ingredients.

Combine Noodles and Sauce: Add the cooked udon noodles to the bowl with the sauce. Toss the noodles thoroughly to ensure they are evenly coated with the chili oil mixture.

Garnish: Sprinkle the sliced spring onion and toasted sesame seeds over the noodles. If desired, add fresh cilantro or parsley for an added touch of freshness.

Serve: Divide the chili oil udon noodles into bowls and serve immediately while warm. Adjust the amount of chili oil based on your preference for spiciness.
